A Lemon Tuesday

A lemon Tuesday is what I decided to call this post because today is Tuesday and I decided to make a lemon pie. Many prefer to make lemon tarts but I also enjoy a rich texture of dough. I looked into my mother’s recipe book and found just the right recipe! Make your Tuesday special by baking something special. I often make the cake without the meringue topping but its good to know how to prepare it incase you want to make the pie look more festive.


200 g Butter

200 g Sugar

5-6 Eggs

1 tsp Soda

200 g Flour

1/2 Lemon


1. Pre-heat oven to 180 C.

2. Mix sugar and butter with an electric mixer until fluffy.

3. Add eggs.

4. Add soda.

5. add flour.

6. Grate the lemon’s skin into the mixture.

7. Pour the dough into a cake pan.

8. Bake for 20 minutes.
